Fried Sweet Potato Hashbrowns
Instructions:
- 1/2 Pound Diced bacon
- 1 Cup Chopped onions
- Salt; to taste
- Freshly−ground black pepper; to taste
- 1 Tablespoon Chopped garlic
- 2 Pound Sweet potatoes; peeled, grated
- In a large skillet, render the bacon until crispy, about 8 minutes. Add the onions.
- Season with salt and pepper. Saute the onions until soft, about 2 minutes.
- Add the garlic and sweet potatoes. Season with salt and pepper.
- Saute for about 10 to 15 minutes. Remove from the heat and serve warm.
- This recipe yields 8 servings.
