Frozen Watermelon Mint Daiquiris
Instructions:
- mint syrup
- 1 cup sugar
- 1 cup packed fresh mint leaves
- 4 cups (1-inch cubes) seedless watermelon
- 1 cup silver rum
- ½cup Mint Syrup
- ½ cup fresh lime juice
- Fresh mint sprigs, for garnish
- To make the syrup, combine 1 cup water, the sugar, and the mint in a medium saucepan. Bring to a boil over medium heat, stirring often to dissolve the sugar. Remove from the heat and let cool completely. Strain through a wire sieve into a jar, pressing hard on the mint leaves with a wooden spoon. (The mint syrup can be stored in a jar and refrigerated for up to 2 months.)
- Spread the watermelon on a rimmed baking sheet. Freeze until the watermelon is solid, about 3 hours. (The watermelon chunks can be stored in a self-locking plastic bag and frozen for up to 1 month.)
- In two batches, combine the watermelon, rum, syrup, and lime juice in a blender and process until smooth. Pour into glasses and garnish with mint sprigs. Serve chilled.
