Fruit Crisp
Instructions:
- Almost any fruit can be made into a flavorful crisp. It’s an easy way to create a light and colorful finish to any meal. This is great served with a dollop of freshly whipped Cedar Summit Farm cream. This crisp is also so simple and wholesome that in our house we eat it as breakfast with a scoop of yogurt.
- In a saucepan over low heat, heat 1 cup of the juice, the fruit, and the vanilla. Start with the chopped apples or stone fruits and simmer them for 5 to 10 minutes. If you’re using berries, add these now and continue to simmer on very low heat for another 10 minutes, until the fruit is very thick and sweet smelling.
- Preheat the oven to 375 degrees. While the filling cooks, combine the oats, butter or oil, remaining 1/2 cup of juice, flour, salt, and cinnamon in a bowl. The dough should be moist, but still slightly crumbly.
- If it is too wet, add more oats, and if it is too dry, add more liquid. Pour the fruit into a 9×13-inch baking pan and sprinkle the topping on top of the fruit. Cover the pan with foil and bake for about 20 minutes. Remove the foil and bake another 5 to 10 minutes until browned.
