Fruit jelly ice
Instructions:
- The simplest of the frozen desserts, fruit ices are the forerunners of ice cream itself. Fruit ices are a mixture of fruit juice, sugar, and water that when frozen with agitation, as in a mechanical or handcranked ice cream freezer, creates a smooth, fruit-flavored ice. The old White House Cookbook (1887) gives four recipes for ices. In a rather matter-of-fact suggestion, the book says that when fruit jellies are used, they should first be heated gently with water to melt them sufficiently. "Other flavors may be made in this manner, varying the flavoring to taste."
- Homemade or good-quality store-bought fruit jelly;
- Water;
- Lemon juice to taste.
- Blend the jelly with an equal amount of water, whisking until smooth. Add lemon juice to taste.
- Turn into a hand-cranked or mechanical ice cream freezer and freeze according to the manufacturer's directions.
- Flavors that work well are raspberry, plum, grape, strawberry, apple, pineapple, and cranberry.
