Garlic Cheese Grits

- 1 cup quick- cooking grits
- 1 teaspoon salt
- 1⁄2 cup (1 stick) butter or margarine, cut into 1⁄2- inch cubes
- 1 cup milk
- One 6- ounce roll garlic cheese, cut into 1⁄2- inch cubes
- 2 eggs, beaten
- 1⁄4 cup shredded American cheese or mild Cheddar

This could be a breakfast casserole for brunch or a side dish for lunch or dinner. Grits are a Southern tradition. What a wonderful way to start a new year! This resembles a soft polenta. It is great for potlucks and family gatherings because it holds the heat well.
- Preheat the oven to 350°F. Grease a 13 × 9- inch glass baking dish.
- Cook the grits with the salt and 4 cups water in a large saucepan, according to the package directions. Stir in the butter, milk, garlic cheese, and eggs; mix well.
- Spoon into the prepared pan. Sprinkle the American cheese over the top. Bake for 45 minutes, or until set.
