GARLIC SHRIMP

- ½ cup olive oil
- 1 onion, diced
- 2 garlic cloves, finely chopped
- 1 guajillo chile, thinly sliced
- Salt and pepper to taste
- 2 pounds extra-large shrimp, peeled and deveined
Instructions:
- Heat the oil in a large saucepan over medium heat. Add the onion and garlic and cook until the onion is translucent and the garlic is just golden. Add the chile, and salt and pepper, and cook until tender, about 5 minutes.
-  Add the shrimp and cook, stirring constantly, until pink and opaque throughout, about 5 minutes. Serve with white rice.
