Garlicky Creamy Vinaigrette

- 2 tablespoons freshly squeezed lemon juice
- 2 tablespoons apple cider vinegar
- 1 teaspoon Dijon mustard
- 2 large cloves garlic, minced
- 1 tablespoon chopped fresh herbs such as tarragon, basil, parsley, or thyme
- Coarse sea salt
- 1 ⁄4 cup silken tofu
- 2 tablespoons extra-virgin olive oil
- Freshly ground white pepper
Instructions:
This is a standard vinaigrette with silken tofu added for creaminess and garlic added for punch.
- In an upright blender, combine the lemon juice, vinegar, mustard, garlic, herbs, 1⁄2 teaspoon salt, and tofu. Blend while slowly adding the olive oil. Season with salt and pepper to taste.
