Instructions:
1 shallot, pureed, 1/2 cup carrot juice, 1/2 cup peeled and chopped cucumbers, 1/2 cup pineapple yogurt or sour cream, 1/2 cups chopped tomatoes, 1/4 cup chopped bell pepper, 1/4 cup V-8 juice.
