Gerts Pepper, Onion, and Sausage Sandwich
Instructions:
My mother’s favorite, best with red or yellow peppers,
but not bad with green either. This sandwich can be
made vegetarian, of course, by omitting the sausage.
2 tablespoons butter or olive oil, plus more for the
rolls if desired
2 large Italian sausages (about 1/2 pound), split
lengthwise
2 bell peppers, preferably red or yellow, roasted and
peeled , seeded, and cut into strips
2 medium to large onions, cut in half and thinly sliced
Salt and freshly ground black pepper
2 to 4 long hard rolls
MAKES: 2 large or 4 small sandwiches
TIME: 30 minutes
- Put the butter or oil in a large, deep skillet over medium heat. When the butter melts or the oil is hot, add the sausages and cook until lightly browned on both sides, about 5 minutes total.
- Add the peppers and onions. Season with salt and pepper and cook, stirring occasionally, until very tender, about 20 minutes. Taste and adjust the seasoning.
- Butter the rolls or drizzle them with olive oil if you like. Spread the sausage into the rolls and pile the pepperand- onion mixture on top. Serve hot.
