Ginger Molasses Cookies
Instructions:
- These are a slightly soft version of the classic cookie. The familiar combination of molasses and spices is comforting and just right with a glass of hot cider on a cool fall evening.
- Preheat the oven to 350 degrees and grease a baking sheet.
- Combine the butter, maple syrup, molasses, and eggs in a large bowl and stir until well blended. If you’re using coconut, blend it into this mixture. In a separate bowl, mix together the flour, cinnamon, ginger, baking soda, and salt.
- Add the flour mixture to the wet ingredients and stir until well incorporated. If the mixture seems too wet, add a little more flour. It should be easy to pull off generous spoon-sized portions and roll them into balls.
- Place the balls on the prepared pan. Bake for 12 to 15 minutes.
