Golden fish cakes
Instructions:
- In food processor, pulse bread to make 2 cups crumbs. Transfer to bowl.
- In food processor, finely chop fish; add to bowl. Add egg, onions, celery, salt and pepper to bowl; mix well.
- Using wet hands, shape by heaping 1⁄4 cup into eight 1⁄2-inch thick patties. (Make-ahead: cover and refrigerate for up to 24 hours.)
- In nonstick skillet, heat oil over medium heat; fry patties, turning once, until golden, about 10 minutes.
