Greek Meatballs
Instructions:
- These baked meatballs are prepared with a combination of beef and lamb, a touch of mint, and some feta cheese. Offer some Tzatziki
- 1 pound ground beef chuck
- 1 pound lean ground lamb
- 1 cup fresh bread crumbs (about 2 slices bread)
- 2 large eggs
- 4 ounces feta cheese, finely crumbled (1 cup)
- 3 bunches green onions, finely chopped (1 cup)
- 1â„4 cup chopped fresh flat-leaf parsley
- 2 garlic cloves, finely chopped
- 1 tablespoon dried mint, crumbled
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- 1â„2 teaspoon salt
- 1â„4 teaspoon ground black pepper
alongside, if you like.
- Preheat oven to 425°F. In large bowl, combine ground beef, ground lamb, bread crumbs, eggs, feta, green onions, parsley, garlic, mint, oil, vinegar, salt, and pepper just until well blended but not overmixed.
- Shape mixture into scant 1â„4-cup meatballs, handling meat as little as possible. Place 1 inch apart in two jelly-roll pans. Bake until cooked through, 20 to 25 minutes. Makes 8 main-dish servings.
