Greek Salad With Lamb

- 1 pound ground lamb
- ½ cup finely chopped Greek herbs such as dill, mint, oregano, parsley
- salt to taste
- 2 hearts of romaine lettuce, finely chopped
- 1-2 tomatoes, chopped
- 1 large or 2-4 small cucumbers, chopped
- 1 cup pitted Kalamata or other Greek olives
- ¼ cup lemon juice
- ½ cup olive oil
Instructions:
What better meat to add to a Greek-inspired dish than lamb? Ground lamb turns this light salad into a substantial meal.
- Sauté ground lamb with herbs for 6-8 minutes, or until cooked through. Add salt to taste.
- Combine meat with lettuce, tomato, cucumber and olives.
- Whisk together lemon juice and olive oil. Drizzle on top of salad.
