Greek Style Grilled Halibut
Instructions:
Greek cooks have long favored the clean, simple flavors of fresh lemon and oregano with fish. One bite of this, and you’ll understand why. 1 lemon 3 tablespoons olive oil 2 garlic cloves, finely chopped 2 teaspoons chopped fresh oregano 1â„2 teaspoon salt 4 halibut steaks, 3â„4 inch thick (6 ounces each)
- From lemon, grate 1 teaspoon peel and squeeze 2 tablespoons juice. In large bowl, with wire whisk, whisk lemon peel and juice, oil, garlic, oregano, and salt until mixed. Add halibut steaks, turning each to coat. Cover and refrigerate 1 hour to marinate, turning once or twice.
- Meanwhile, prepare outdoor grill for covered direct grilling over medium heat.
- Remove halibut from marinade; discard marinade. Place halibut on grill, cover and cook, brushing with marinade during first half of grilling, until halibut is just opaque throughout, 3 to 4 minutes per side.
- Makes 4 main-dish servings.
