Green tomatillo salsa
Instructions:
- Puree the tomatillos, cilantro, chile, onion, and garlic in a blender or the bowl of a food processor fitted with the metal blade. Heat the oil until shimmering hot in a large saucepan over high heat. Carefully pour in the puree; it will vigorously bubble and hiss at first.
- Reduce the heat and simmer until reduced to 2 cups, about 10 minutes. Season with the salt.
- Transfer into a medium bowl or glass jar and cool to room temperature. Serve at room temperature or lightly chilled. Stir well and check the seasoning before serving.
