Greens with Cherry Vinaigrette
- 2 tablespoons butter
- 2 tablespoons sugar
- 1/2 cup walnuts
- 4 cups fresh spring greens
- 1/4 cup thinly sliced red onion
- 3/4 cup cubed Crystal Market*
- Granny Smith apple
- 1 cup Prima Frutta* fresh cherries, pitted and halved
- CHERRY VINAIGRETTE
- 1/4 cup chopped fresh parsley
- 1 tablespoon minced shallot
- 1/2 tablespoon honey
- 1/2 teaspoon ground white pepper
- 2 tablespoons white wine (sweet or dry)
- 3/4 cup white balsamic vinegar
- 1/2 cup Prima Frutta* fresh cherries, pitted, diced, juiced and strained (discard skins)
- 1 cup olive oil
Instructions:
First you must prepare Cherry Vinaigrette: for this you have to combine parsley, shallot, honey, pepper, wine, vinegar and cherry juice. Slowly whisk in olive oil. Cover and refrigerate overnight.
- Melt butter and sugar in a small saucepan over medium heat. Toss in walnuts and cook until coated and slightly darkened. Set aside.
- Place greens in a salad bowl and toss with 1/2 cup vinaigrette until lightly coated. Add onion, apples, cherries and walnuts. Makes 4 servings.
