Grilled Chicken Breasts Saltimbocca
Instructions:
In Italian, saltimbocca means “jump in your mouth†and these irresistible prosciutto-and-sage–topped chicken breasts will do just that. One note of caution: Don’t slice the prosciutto paper-thin or it could burn. 4 medium skinless, boneless chicken breast halves (11â„4 pounds) 1â„8 teaspoon salt 1â„8 teaspoon ground black pepper 12 fresh sage leaves 4 large slices prosciutto (4 ounces)
Makes 4 main-dish servings. Prep: 10 minutes Grill: 10 minutes
- Prepare outdoor grill for covered direct grilling over medium heat.
- Sprinkle chicken with salt and pepper. Place 3 sage leaves on each breast half. Place 1 prosciutto slice on top of each breast half, tucking in edges if necessary; secure with toothpicks.
- Place chicken, prosciutto side down, on grill, cover and cook 5 to 6 minutes. Turn and grill until chicken loses its pink color throughout, 5 to 6 minutes longer.
