Grilled lettuce hearts
Instructions:
- To make the dressing, put the mint leaves and mustard into a tall jar or pitcher.
- Add the sherry vinegar.
- Add the egg yolk.
- Add the oil while processing with a hand-held blender until the mint is finely chopped. Season with salt.
- Cut the lettuce hearts in half lengthwise.
- Heat a large frying pan over medium heat and add a little oil. Season the lettuce hearts with salt, then fry for about 5 minutes, until golden on both sides.
- Cut the fried lettuce hearts in half again, then arrange 4 pieces on each serving plate.
- Pour the mint vinaigrette over the lettuce just before serving.
