Hard Sauce

Hard sauce really means a "hard sauce," in that it is simply a stiff mixture of powdered sugar, butter, and flavorings, which can be sliced or rolled out and cut with a fancy cookie cutter to make individual servings.
- 1⁄2 cup butter;
- 11⁄2 tablespoons brandy or sherry;
- 1 teaspoon vanilla;
- 12⁄3 cups packed powdered sugar.
- Cream the butter until soft. Add the brandy and vanilla, then blend in the powdered sugar, until the mixture is fairly stiff and smooth.
- Press into a shallow mold, or shape into a roll and wrap in plastic.
- Chill until firm. Slice, or cut into fancy shapes with a cookie cutter. MAKES ABOUT 6 SERVINGS
