Hazelnut Honey Granola
Instructions:
Eat this granola as a snack, or serve as a breakfast cereal. 3 cups old-fashioned oats, uncooked 3â„4 cup honey 4 tablespoons butter or margarine, melted 11â„2 teaspoons vanilla extract 1 cup hazelnuts (filberts) and/or whole natural almonds, coarsely chopped 1â„2 cup toasted wheat germ 1â„2 cup sesame seeds 1 cup dried tart cherries (4 ounces) or dark seedless raisins 1â„2 cup dried apricots (3 ounces), thinly sliced 1â„2 cup golden raisins
Makes 9 cups. Prep: 20 minutes Bake: 30 minutes
- Preheat oven to 350°F. Divide oats between two jelly-roll pans; bake, stirring twice, until lightly toasted, about 15 minutes.
- In large bowl, combine honey, melted butter, and vanilla. Add toasted oats, hazelnuts, wheat germ, and sesame seeds, stirring to coat. Spread mixture evenly in same jelly-roll pans.
- Bake, stirring every 5 minutes, until mixture is dark golden brown, 15 to 20 minutes. Cool granola in pans on wire racks. Transfer granola to bowl and stir in cherries, apricots, and golden raisins. Store in airtight container.
