Hearty Quilt Inn Salad
Instructions:
- 1 lb. spicy smoked farmer’s sausage, chopped
- 1 lb. fresh mushrooms, sliced
- 1 cup fresh radishes, sliced
- 1/2 lb. Provolone cheese, cut in strips
- 1 lb. mixed fresh greens (about 10 cups)
- Quilt Inn Dressing
- 2 tbsp. Dijon mustard
- 3 tbsp. red wine vinegar
- 2 cloves garlic, minced
- 2 tbsp. Herbes de Provence * or any combination of fresh savory herbs
- 1/3 cup olive oil
- 1/3 cup sour cream
- Fry sausage in skillet on high for 5 minutes or until browned.
- Remove sausage and drain on paper towels to remove excess fat.
- Combine sausage, mushrooms, radishes, cheese and toss with greens.
- Quilt Inn Dressing
- Whisk all ingredients together until smooth.
- Toss with salad just before serving.
- *Herbes de Provence is a blend of equal parts thyme, rosemary, lavender and Summer savory.
- Make it yourself or it may be available in specialty food shops or some supermarkets.
