Honeydew and fresh peach compote

Peaches that ripen and are available in midsummer are a natural combination with melons. Because of the color contrast, this makes a pretty fruit salad that is popular for picnics and outings, and serving it as suggested here enhances the natural beauty of this dessert. The addition of sweet vermouth, which is optional, brings out the flavors of the fruits.
- 2 large, ripe peaches, peeled, pitted, and sliced;
- 2 tablespoons fresh lemon juice;
- 11⁄2 tablespoons sugar;
- Eight 1⁄2-inch-thick wedges honeydew melon, seeded, peel removed;
- 1⁄2 cup sweet vermouth (optional);
- Fresh mint sprigs for garnish.
- In a mixing bowl, combine the peaches, lemon juice, and sugar.
- Arrange 2 wedges of melon on each serving plate to make a ring.
- Divide the peach slices among the 4 plates, and pour 2 tablespoons sweet vermouth over each, if desired. Garnish with fresh mint sprigs.
