Honeyed Fruit with Gingered Wisconsin Mascarpone

Fruit:
- 1 cup white grape juice
- ¼ cup honey
- ¼ cup orange liqueur or cream sherry
- 6 cups mixed seasonal fresh fruits (any variety, except bananas)
- ¾ cup (6 ounces) mascarpone cheese
- 2 tablespoons honey
- 1 tablespoon orange liqueur or cream sherry
- 1 tablespoon finely chopped crystallized ginger
- Milk (optional)
Instructions:
To serve, spoon the fruit into dessert dishes. Then spoon the topping over the fruit. (Stir a little milk into the topping, if necessary, to make it smooth and spoon-able.) Garnish with additional crystallized ginger, if desired.
- For the fruit, in a small saucepan, combine the grape juice and ¼ cup of honey. Bring to a boil, reduce the heat, and simmer, uncovered, for 5 minutes. Stir in ¼ cup of orange liqueur or sherry.
- Place the fruit in a large bowl. Pour the warm honey mixture over the fruit. Cover and chill for at least 2 hours or up to 4 hours, stirring occasionally.
- For the topping, in a small bowl, combine the cheese, 2 tablespoons of honey, 1 tablespoon of liqueur, and crystallized ginger. Cover and chill until serving time.
