Hummingbird Cake
Instructions:
- 3 cups of plain flour
- 2 cups of sugar
- 1 teaspoon of baking soda
- 1 teaspoon of salt
- 1 teaspoon cinnamon
- 2 cups of chopped pecans
- 1 1/2 cups of vegetable oil
- 3 eggs
- 1 1/2 teaspoons of vanilla
- 1 – 8 ounce can of crushed pineapple
- 3 bananas, mashed
- Place all of the dry ingredients in a large bowl.
- Add all of the other ingredients and stir until mixed well. Do not beat.
- Pour into a greased and floured tube pan.
- Bake at 325 degrees for 1 hour and 15 minutes.
- Remove from the oven and allow to cool in the pan.
- For The Frosting:
- 1 – 4 ounce package of cream cheese (at room temperature)
- 1/2 stick of butter
- 1 teaspoon of vanilla
- 1/2 box of 10X powdered sugar
- Mix all of the frosting ingredients together and beat by hand until smooth and creamy.
- Spread over the cooled cake.
