Iced cantaloupes

Cantaloupes and watermelon have been garden fruits associated with the South. However, in an early Virginia cookbook, the author must have felt the need to explain how to serve them: "Cut out carefully the end with the stem, making a hole large enough to admit an apple. With a spoon, remove the seed. Fill with ice, replace the round piece taken out, and place on end. Eat with powdered sugar, salt, and pepper." Because most cantaloupes are larger than the one that was described, we get 2 servings from 1 melon.
- 1 medium cantaloupe;
- Crushed ice;
- Powdered sugar;
- Salt and pepper to taste (optional).
- Cut the cantaloupe in half. Remove the seeds and pack the cavities with ice. Fit the two halves together again and let stand 30 minutes, until chilled. Remove the ice and place each half on a serving dish. Sprinkle with powdered sugar, salt, and pepper. Serve immediately. MAKES 2 SERVINGS
