Johnny Cakes
Instructions:
- 1/2 cup of flour
- 1 cup of cornmeal
- 1 teaspoon of sugar
- 1 teaspoon of salt
- 1 lightly beaten egg
- 1 cup of hot water or milk
- 1 tablespoon of shortening
- Mix all of the dry ingredients together and then stir in the egg, water or milk, and the shortening.
- Drop or pour into a hot, greased cast iron skillet to form small cakes, and fry until golden brown on both sides.
- Can beaten with butter as bread or with molasses or syrup as pancakes.
