Jordans fried apples
Instructions:
Most years on our birthday we get to pick a special meal for Mama
to prepare for us. I always go for a full country breakfast, served at
suppertime. Homemade biscuits, country ham, hash brown casserole,
scrambled eggs, bacon, and these special fried apples.
Of course, no one person can actually manage to eat even a
portion of everything prepared, but it sure does lay out for a grandlooking
meal!
2½ cups apple juice
4 large Golden Delicious apples, unpeeled and cut into wedges
¼ cup sugar
3 tablespoons cornstarch
1 teaspoon ground cinnamon
¼ teaspoon ground allspice
- In a large skillet, combine the apple juice and sliced apples. Place over medium heat and cook until the apples are fork-tender, turning often for even cooking. Be careful not to overcook the apples. Remove the apples from the juice with a slotted spoon and place in a large bowl.
- In another bowl, combine the remaining ingredients and stir with a wire whisk until well blended. Pour the hot apple juice into the dry mixture. Whisk vigorously until the lumps are gone. Pour this mixture back into the skillet and heat over medium heat, whisking constantly, until bubbly and thick.
- Remove from the heat and pour over the apples in the bowl. Stir until the apples are evenly coated.
