Junket

The availability of junket tablets or powder is said to be diminishing with the decreasing production of junket by some companies.
- 1 litre full cream milk
- 100 g caster sugar
- 1 teaspoon vanilla extract
- 4 junket tablets
- 1 tablespoon cold milk, extra
Instructions:
- Place the litre of milk and the sugar in a saucepan and heat gently to body temperature (37ºc). remove from the heat and stir in the vanilla.
-  Crush the junket tablets and mix with the 1 tablespoon cold milk. add some of the warm milk mixture then pour the junket mixture into the warm milk mixture. stir and place in a bowl or individual ramekins. leave at room temperature for 30 minutes or until set, then refrigerate.
- Top with whipped cream just before serving.
