Kansas Fly Pie
Instructions:
- 1 lb. cornmeal
- 2 qt. water
- 1 tsp. salt
- 1/4 - 1/2 cup raisins
- beaten eggs
- syrup, honey, or jam
- You may want to start this at home..
- Put 2 quarts of water into a pot, make sure the pot can hold 4 qt. Add 1 teaspoon salt; bring to boil; pour cornmeal into the water a handful at a time (about 1 lb.) stirring constantly until the mush gets thick.
- Cover and simmer slowly for 20 min.
- Stirring often; add raisins; mix well; poor into greased bread pans (2) and let cool until congealed.
- Slice loaf into 1/2 inch thick slices; dip in beaten eggs; then fry, hot and browned.
- Serve with syrup, honey, or jam.
