Kebab Stew
Instructions:
- 2 LBS EGGPLANT (LONG)
- 2 LBS MEDIUM FAT GRAUND BEEF
- 1 LARGE ONION
- 3 TOMATOES (CUT IN 4)
- 1 TABLESPOON TOMATO PASTE
- SALT + PEPPER
- 1 TABLESPOON BUTTER
- 1 LEMON JUICE
- PEEL EGGPLANTS, CUT LONGWISE AND THEN 2 INCH THICK.
- IN A SEPERATE BOWL COMBINE GROUND BEEF WITH SALT AND PEPPER. ON A SKEWER, PUT ONE EGGLANT, ONE WALNUT SIZE BEEF BALL. AND THEN 2 EGGLANT, ONE BEEF BALL. REPEAT. (TOTAL 3 BEEF BALLS AND 6 EGGPLANTS) ON CHARCOAL, BARBECUE THE SKEWERS.
- ALSO, BARBECUE THE TOMATOES ON SKEWERS.
- IN THE MEANTIME, PUT A CASSEROLE ON THE STOVE TOP WITH 1 TABLESPOON BUTTER.
- WHEN MELTED PUT DICED ONIONS, STIR UNTIL SOFTENED, THEN PUT TOMATO PASTE, 1 MINUTE
- LATER PUT WATER (3 CUPS). WHEN ALL THE SKEWERS ARE BARBECUED, PUT THEM IN THE CASSEROLE AND COOK FOR 20 MINUTES, THEN ADD LEMON JUICE.
- SERVE WITH PLAIN RICE
