Key Lime Pie
Instructions:
- 2 limes (or 4 key limes, which are smaller)
- 4 eggs, separated into yolks and whites
- 1 cup sugar
- 3 ounces lime gelatin
- 1 cup water
- dash green food coloring (optional)
- 1 cup whipping cream
- ¼ teaspoon cream of tartar
- Preheat oven to 375 degrees F and pre-bake pie crust.
- Scrape zest (green outer rind) then extract juice from limes.
- Combine egg yolks, ½ cup sugar, water, gelatin, a drop of green food coloring, zest of lime, and juice.
- Mix well and cook on low heat until thickened.
- Remove from heat and set pan in ice water, stirring until mixture is cooled and thickened.
- Whip cream and fold into mixture.
- Pour mixture into pre-baked pie crust and chill.
- Top with meringue (use ½ cup sugar, cream of tartar, egg whites) and brown
