Kielbasa and Red Cabbage
Instructions:
- It’s worth a trip to a Polish butcher for homemade kielbasa to make this stick-to-your-ribs skillet meal. Try serving over mashed potatoes.
- 2 tablespoons butter or margarine
- 1 small onion, chopped
- 1 small head red cabbage (11â„2 pounds), thinly sliced
- 2 Golden Delicious apples, peeled, cored, and thinly sliced
- 1â„2 cup apple juice
- 3 tablespoons red wine vinegar
- 1 tablespoon sugar
- 1 teaspoon salt
- 1 pound kielbasa (smoked Polish sausage), cut crosswise into 2-inch pieces
- In nonstick 10-inch skillet, melt butter over medium heat. Add onion and cook, stirring, until tender. Add cabbage, apples, apple juice, vinegar, sugar, and salt; heat to boiling. Reduce heat to low; cover and simmer for 15 minutes.
- Add kielbasa to cabbage mixture; heat to boiling over high heat. Reduce heat; cover and simmer 15 minutes.
