King Ranch Chicken
Instructions:
- 1 large fryer
- 1 large onion
- 1 large green pepper
- 1 package tortillas
- 1 can chicken stock or soup
- ½ pound cheddar cheese, grated
- 1½ teaspoons chili powder
- garlic salt to taste
- 1 can condensed cream of mushroom soup
- 1 can tomatoes, crushed
- Stew or bake chicken.
- Remove chicken from bone and cut in bite-size pieces.
- Chop onion and bell peppers into ½- to 1-inch chunks.
- In large, buttered casserole dish, combine prepared chicken, onion, and green pepper.
- Add a layer of tortilla strips which have been dipped into hot stock just long enough to soften.
- Layer with chicken, then onions and green peppers, then tortilla strips until all are used.
- Top off with grated cheese and sprinkle with chili powder and garlic salt.
- Then add in order, giving a little time to soak into layers, chicken stock or soup, mushroom soup, and tomatoes.
- Bake in moderate (350 degrees F) oven 30 to 45 minutes.
- Serves eight to ten.
