Kirby Cucumber Salad
Instructions:
The unwaxed skin of kirby cucumbers doesn’t need to be peeled. If you can’t find them, buy regular cucumbers and remove half the peel in strips, creating stripes. 4 pounds kirby cucumbers, not peeled, thinly sliced 1 tablespoon salt 3â„4 cup distilled white vinegar 2 tablespoons sugar 2 tablespoons chopped fresh dill
Makes 12 accompaniment servings. Prep: 30 minutes plus standing and chilling
- In colander set over large bowl, toss cucumbers and salt; let stand 30 minutes at room temperature. Discard liquid in bowl. Pat cucumbers dry with paper towels.
- In same clean bowl, combine vinegar, sugar, and dill. Add cucumbers and toss to coat. Cover and refrigerate, stirring occasionally, at least 1 hour to blend flavors or up to 4 hours.
