LAMB CHOPS WITH CROSSOVER SPICE CRUST

- 2 tablespoons Crossover Spice Blend
- 1 tablespoon coarse kosher or sea salt
- Four 1-inch-thick loin lamb chops (organic if possible)
- Good-tasting extra-virgin olive oil
- ½ lemon
Instructions:
The quantity of spices may seem like a lot, but they are surprisingly gentle with the lamb, so be generous with them.
- Combine the Crossover Spice Blend with the salt in a small bowl. Rub a generous amount of the blend on both sides of the chops, and set the extra spice blend aside.
- Film the bottom of a 12-inch skillet with the olive oil, and heat it over medium-high heat. When the oil looks wavy, sear the chops on one side for about 3 minutes, until they have a golden brown glaze. Turn them over, reduce the heat to medium, and continue cooking, turning the chops occasionally, until they are done to your liking, about 9 or 10 minutes for medium rare (125° to 130°F on an instant-reading thermometer).
- Dust the chops with additional spice blend and sprinkle with a squeeze of lemon.
