Lemon Garlic Potato Packet
Instructions:
Whole cloves of garlic grill up butter-soft along with the potatoes. If you like, once the potatoes and garlic are cooked (and while they’re still warm), toss them with your favorite vinaigrette for a grilled potato salad. 21â„2 pounds red potatoes, not peeled and cut into 1-inch chunks 12 garlic cloves, peeled 2 tablespoons olive oil 11â„2 teaspoons freshly grated lemon peel 1 teaspoon salt 1â„4 teaspoon coarsely ground black pepper
Makes 8 accompaniment servings Prep: 15 minutes Grill: 30 minutes
- Prepare outdoor grill for covered direct grilling over medium heat.
- In large bowl, toss potatoes, garlic, oil, lemon peel, salt, and pepper until potatoes are evenly coated.
- Layer two 30" by 18" sheets heavy-duty foil to make double-thick sheet. Place potato mixture in center of stacked foil. Bring short ends of foil up and over potatoes; fold several times to seal. Fold remaining sides of foil several times to seal in juices.
- Place packet on grill, cover and cook, turning packet once halfway through grilling, until potatoes are fork-tender, 30 minutes.
- Before serving, with kitchen shears, cut an X in top of foil packet to let steam escape, then carefully pull back foil to open.
