Lentil–Walnut Burgers
Instructions:
These meatless burgers are full of rich and savory flavor. The
recipe provides a good basic formula, and you can experiment
with different legumes and nuts for flavor and texture.
1/4 cup corn oil
1 medium onion, diced
2 carrots, diced
5 stalks celery, diced
3 cloves garlic, minced
1 tablespoon dried dill
1 tablespoon dried thyme
2 tablespoons prepared
mustard
1/2 cup mayonnaise
(use soy mayonnaise for
vegan version)
1 cup walnuts, chopped finely
(this can be done in a food
processor)
1 cup small capers, rinsed
and drained
2 cups brown lentils cooked
in 4 cups water
1 to 2 cups brown rice flour
- Heat the oil in a skillet and sauté the onion, carrots, celery, and garlic until very soft. Add the dill, thyme, mustard, mayonnaise, nuts, and capers.
- Combine this mixture with the cooked lentils in a bowl. Transfer half of the mixture to a food processor and puree it.
- Return the pureed mixture to the bowl, add about a cup of the brown rice flour, and stir to combine.
- The mixture should be firm but not crumbly. If it seems flimsy and too soft, add a little more rice flour.
- Form the mixture into patties and fry them in a frying pan until browned and heated through.
- Serve with your favorite “burger” condiments.
