Lentil Soup Madrid Style
Instructions:
- 4 tbsp. olive oil
- 1 large onion, chopped
- 1 can whole pimento, drained and chopped
- 1 green pepper, seeds cleaned out and chopped
- 2 tbsp. all-purpose flour
- 1 16-oz. can (about 2 c.) tomatoes, cut up with a spoon
- 3 carrots, peeled and chopped
- 2 c. lentils
- 1 tbsp. salt
- 8 c. water
- In a large kettle, heat the olive oil for 1 to 2 minutes. Add onion, pimento, and green pepper and cook on medium heat until soft.
- Stir in flour. Then add tomatoes, carrots, lentils, salt, and water. Cover and simmer over very low heat for about 2 hours.
- Preparation time: 30 minutes
- Cooking time: 2 ½ hours
- Serves 12
