Lime Marinated fish
Instructions:
- Cut the fish into thin slices.
- Arrange on a serving dish, without overlapping too much. Chill in the fridge.
- Squeeze the limes, then pass the juice through a fine-meshed strainer.
- Peel the outer layers from the onions.
- Thinly slice them.
- Pick the cilantro leaves from the stems and chop finely.
- Slowly pour the oil into the lime juice, whisking continuously with a balloon whisk (or using a hand-held blender) to make a slightly thickened and cloudy dressing.
- Mix the onions with the lime juice and oil.
- Scatter the scallions over the fish and season with salt.
- Pour the dressing over the fish and sprinkle with the chopped cilantro.
