Love Knot Cookies
Instructions:
This recipe is a for a traditional Italian holiday cookie
vegetable oil cooking spray
5 eggs
1 cup softened butter (left at
room temperature for 1 hour)
1 cup softened cream cheese
(left at room temperature for
1 hour)
1 cup sugar
3 tablespoons vanilla extract
5 cups all-purpose flour
5 tablespoons baking powder
1⁄4 teaspoon salt
Time :60 minutes
Makes :4 to 5 dozen cookies
- Icing
- 1⁄2 cup confectioner’s sugar
- 1 tablespoon lemon extract
- 2 tablespoons water sprinkles
- Preheat the oven to 400 F. Spray 2 cookie sheets with vegetable oil cooking spray.
- Break the eggs into a small bowl and whisk until smooth.
- In a medium bowl, use a hand-held mixer on medium speed to cream the butter and cream cheese until smooth (about 3 minutes).
- Add the sugar, eggs, and vanilla extract. Continue to beat until smooth and creamy.
- In another medium bowl, whisk the flour, baking powder, and salt together.
- Blend the flour mixture into the egg mixture with a wooden spoon until it resembles a soft dough. Be careful not to overmix.
- Roll the dough into balls, using about 1 tablespoon of dough for each cookie. Place on cookie sheets about 2 inches apart.
- Use oven mitts to place cookies in oven. Bake the cookies for 10 to 12 minutes until done. Do not brown.
- Meanwhile, in another small bowl, whisk the confectioner’s sugar, lemon extract, and water together. This will be the icing.
- Take the cookies out of the oven with oven mitts.
- Let cool 1 minute, then transfer to a wire rack with a spatula.
- Drizzle the icing over the cookies with a teaspoon and drop sprinkles on them.
