Lucilles potato salad
Instructions:
I was never a fan of potato salad until I tried my grandmother
Lucille’s, and I’ve heard other folks say the same thing. This is a good
old-fashioned recipe that’s as Southern as the day is long.
Note from Grandmother Lucille: Potato salad varies in how thick it
turns out. If it is too thick after mixing, you can add a little pickle juice or
extra mayonnaise to make it the right consistency for your taste.
3 cups peeled, cubed, and cooked potatoes
3 eggs, hard-boiled and chopped
½ cup mayonnaise
2 tablespoons yellow mustard
One 4-ounce jar diced pimento, drained
1/3 cup sweet relish or diced sweet pickles
¼ cup finely diced onion
Salt and pepper to taste
8 servings
- In a large bowl, combine all the ingredients and stir well. Serve warm or refrigerate and serve cold.
