Lychee, lime and mixed fruit jelly
Instructions:
- Chill four small wine glasses in the fridge.
- Place the leaf gelatine in a little cold water and leave for 5 minutes to soften. Lift out and place in a pan with the measured water. Heat gently until the gelatine dissolves.
- Put the lychee juice, lime juice and caster sugar into another pan. Heat gently to dissolve the sugar, then let it cool slightly. Pour the fruit juice mixture into the gelatine and mix well.
- Place 1 lychee, 2 blackberries, 1 strawberry and 1 tablespoon pomegranate seeds into each wine glass. Pour the gelatine mixture into each glass, leaving 1 inch space at the top. Top up the rest of the glass with sparkling wine or sparkling soft drink, and then place the glasses in the fridge for 2 hours to chill before serving.
