Mango-Lime Bean Salad

- 1 mango, peeled and diced
- One 15-ounce can cannellini beans, drained and rinsed
- Red onion, diced, to taste (start with ½)
- Cilantro (½ cup or more)
- Zest of 1 lime
- Juice of 1 juicy lime, squeezed (2 tablespoons or to taste)
Instructions:
The red onion adds a dash of color, and the zest (the peel) intensifies the lime flavor. Make sure there is plenty of lime—it makes the difference.
- Combine all ingredients and serve on a bed of arugala or baby lettuce or, best of all, mâche if you can find it. This is also good as a salsa.
