Mary’s 5- a-Day Vegetable Parmesan

- 4 cups thinly sliced zucchini
- 1 small onion, sliced
- 1 green bell pepper, cut into strips
- 1 medium carrot, grated
- 2 tablespoons butter or margarine
- 1 teaspoon salt
- Black pepper, optional
- 1 cup diced tomatoes, seeds removed
- 3 tablespoons grated Parmesan
- Chopped green onions (white and green parts)
Instructions:
Serve over cooked pasta for a fresh vegetarian meal.
- Combine the zucchini, onion, bell pepper, carrot, 1 tablespoon water, butter, salt, and black pepper, if using, in a large skillet. Cover and cook 1 minute. Uncover and cook, turning with a wide spatula, until the vegetables are barely tender, 5 to 10 minutes.
- Add the tomatoes and Parmesan. Toss and cook for 1 minute longer. Sprinkle chopped green onions on top.
