MEDITERRANEAN CHUTNEY
Instructions:
- Serve this with cut-up raw vegetables, thin slices of baguette, or pita triangles. It’s a refreshing twist on the salad, and a pleasant way to get your fresh vegetables!
- 8 fresh tomatoes, cored, seeded, and chopped
- 6 scallions, chopped, including greens
- 2 stalks celery, chopped
- 1 green bell pepper, cored, seeded, and chopped
- 1 red bell pepper, cored, seeded, and chopped
- 1 cup green olives, pitted and chopped
- ¼ cup capers
- 1 tablespoon extra virgin olive oil
- Handful Italian (flat-leaf ) parsley leaves, chopped
- Combine all ingredients, mixing well.
- Allow to sit for 2 hours to overnight to allow flavors to blend.
- Serve at room temperature.
- Serves 8.
