Mediterranean Pasta Salad
Instructions:
- 1 package (8 ounces) refrigerated or frozen cheese tortellini
- 3 cups broccoli cut into florets (may substitute cauliflower or use both)
- 1 can (8 ounces) pineapple chunks
- 2 Tblsp balsamic or red wine vinegar
- 1 Tblsp olive oil
- 1/4 pound fresh link turkey sausage, cooked, drained, sliced
- 1 medium red, yellow, or green bell pepper, cored, seeded, and cut into 1-inch pieces
- Prepare tortellini as package directs.
- Add broccoli during last 2 minutes of cooking. Drain pineapple, reserve 1/4 cup juice.
- Combine reserved juice, vinegar, and oil in large serving bowl.
- Drain tortellini and broccoli. Add tortellini, broccoli, sausage, bell pepper, and pineapple to serving bowl.
- Toss well to coat evenly. Serve at room temperature or chilled.
