Meme s mashed potatoes
Instructions:
I’ve never had mashed potatoes as delicious as my Grandmother
Lucille’s. The kids all call her “MeMe,” and every time we serve
mashed potatoes at a family meal, the question always arises, “Are
these MeMe’s mashed potatoes?” The adults know to get their plates
fixed before this question is asked if at all possible because as soon
as the kids find out that they are, they tend to disappear pretty quickly!
Grandmama actually uses a pressure cooker to make her potatoes
extra-tender. I never use a pressure cooker myself, so I just cook the
dickens out of them.
5 pounds mashed potatoes (or 7 to 8 medium potatoes)
1 teaspoon salt for the water
One 5-ounce can evaporated milk
½ cup (1 stick) margarine
1 teaspoon salt for the potatoes
½ teaspoon black pepper
8 servings
- Peel and cut the potatoes into slices or large cubes. Fill a large pot with enough water to cover the potatoes.
- Add 1 teaspoon salt. Add the potatoes, bring to a boil, and boil gently for about 30 minutes, until very tender.
- Drain the potatoes well and add the remaining ingredients. Mix with an electric mixer until smooth and creamy.
