Michigan black cherry dessert

Cherry orchards in Michigan produce a great share of the nation's black and red pie cherries. Well-ripened, almost overripe cherries are delicious when made into a simple, stewed dessert. It is delicious served over a scoop of ice cream or plain white cake.
- 1 pound very ripe black cherries, pitted;
- 1 cup sugar.
- Put the cherries into a large stainless-steel mixing bowl. Sprinkle the sugar in an even layer onto the bottom of a cast-iron skillet. Place over medium heat and stir with a wooden spoon, until the sugar is melted. Pour molten sugar evenly over the cherries. Place over a bowl of ice and let stand until almost all of the crystallized sugar has melted into the cherry juice.
- Spoon into dessert dishes and serve plain, with cream, or over cake or ice cream.
