Microwave peanut brittle
Instructions:
A modern spin on an old-fashioned treat, this is another one of my
daddy’s favorites (it’s our family’s favorite peanut brittle) and is really
quick and easy to make. Make sure you don’t use a plastic bowl, as
this mixture gets too hot for them. This is one of the few recipes you
shouldn’t make with children, as it gets far too hot for them to safely
help with.
1 cup sugar
1 cup raw peanuts, with or without skins
½ cup light corn syrup
1/8 teaspoon salt
1 teaspoon margarine
1 teaspoon vanilla extract
1 teaspoon baking soda
- Butter a cookie sheet and set aside.
- Mix the sugar, peanuts, corn syrup, and salt together in a large microwave-safe bowl. Microwave on high for 5 minutes. Stir, then microwave on high for 2 more minutes. Stir, then microwave on high for another 2 minutes.
- Stir in the margarine and vanilla until well blended. Add the baking soda and stir until light and foamy. Pour onto the buttered cookie sheet and let cool for about 1 hour. Break into pieces. approximately 1-pound candy
