Modern Bolognese sauce
Instructions:
- Put a large pan over medium-high heat, then add the butter and let it melt. Add the ground beef, fry until it has changed color, then add the sausage meat.
- Cook for a few minutes, season with salt and pepper, then cook for 15 minutes longer, stirring frequently, until dark golden brown.
- Meanwhile, finely chop the onions and celery. Finely chop the carrots.
- Put another pan over a law heat, then pour in the olive oil. Fry the vegetables gently for about 12 minutes, until softened.
- Add the meat to the vegetables and mix everything together well.
- Add the chopped tomatoes and the tomato paste. Season with salt
